Delicious Sun Dried Tomato and White Bean Dip

You know the feeling?  You’ve been invited to a dinner party and are asked to bring an appetizer.  What will you bring?  Your tired of cheese and crackers;  the host is allergic to shrimp so no shrimp cocktail;  a veggie tray doesn’t seem like quite enough.  Then, you have an idea!  What about making an unusual, but delicious dip inspired by the Italian cooking tradition?

Crab dip, spinach artichoke dip, hummus – these are well known classics in the dip world.  We would like to introduce a dip that deserves to be among these legendary dips.  It combines the rich taste of white beans with the spice of sun dried tomatoes.  It is as refreshing on a hot, summer day, as it is comforting on a cold, winter night.  Find your Triscuits or baguette and spread it on thick.  This is a dip worth indulging in.


Cannelloni beans – 2 cans
Sun dried tomatoes – ½ cup, chopped
Olive oil – 2 tablespoons
Garlic – 2 cloves, chopped


Sautee two cloves of chopped garlic in olive oil on medium heat.  Meanwhile, bring two cans of cannelloni beans to a boil.  Remove beans from the stove, drain water and add the olive oil and garlic, the salt and pepper.  Then, whip the ingredients together until they are light and fluffy.  Stir in chopped sun dried tomatoes. Put in the refrigerator to cool and serve at room temperature.

A delightful dip doesn’t have to be difficult to prepare.  In fact, some of the best dishes out there are simple with fresh, clean ingredients.  This sun dried tomato and white bean dip is not only healthy, it tastes great and is easy to take with you.  Next time you have a party to attend, bring it.  We guarantee you will be the life of the party.
