What You Will Need To Make Creamy Sausage and Tomato Pasta

  • 1lb Italian Sausages (I prefer sweet but it is your preference)
  • 1 large chopped onion
  • 4 cloves of minced garlic
  • 5 tomatoes, diced
  • 1 can of tomato sauce
  • 1 ½ cups of Half-and-Half
  • 1 tablespoon of dried basil leaves
  • 1 box of penne or rigatoni pasta
  • Parmesan Cheese

How to Make Sausage and Tomato Pasta

Cook the Pasta

The first thing you will need to do is cook the pasta. To do this, get a large pot and add water. Use the instructions on the back of the pasta box to determine how much water you will need. Once the water is boiling, add 1 teaspoon of salt to the water. Then, add the pasta to the boiling water. Cook the pasta for approximately 7 – 10 minutes or until pasta is at the desired consistency. Some people prefer their pasta done al dente, where the pasta is still firm yet completely cooked, while others prefer that pasta is softer.

Making the Sauce

While the pasta is cooking, you can be making the sauce, or for those that do not multi-task well, you can make the sauce before making the pasta. Before cooking the sausages, you should cut them into small bite-sized pieces. Then, brown the sausages in a frying pan. Once cooked, remove (if any) the casings from the sausage pieces. To save time, you could remove the casing before cooking and slice into pieces after cooking. Once the sausages are browned, add in the onions. Next, add the garlic and sauté for approximately 3 minutes. Once sautéed, add in your diced tomatoes and the can of tomato sauce. Cover the pan so that everything in the pan is heated completely through. Add the Half-and-Half  into the sauce in the pan and again, use the lid to heat your sauce all the way through. If you want a thicker sauce, you will have to cook your sauce longer. For those looking for a thin, yet flavorful sauce, cook for approximately 2-3 minutes. Yet, you be the judge and cook until your sauce is at the desired consistency. Add in the basil and let the sauce simmer for 2 more minutes.

Serve & Enjoy

Add the pasta to your sauce and mix so that the sauce completely covers your pasta. Serve pasta on separate plates, adding parmesan cheese as desired. Serve and enjoy!

4 tablespoons of extra virgin olive oil
3 tablespoons of all-purpose flour

½ teaspoon of chili powder
½ teaspoon ground cumin
1 can of tomato sauce
3/4 tablespoon of salt
1 small onion, chopped
16 ounces of ground turkey
8 corn tortillas
1 can whole kernel corn
½ cup rinsed and drained canned black beans
4 plum tomatoes diced
1 teaspoon fresh ground pepper
2 cups shredded Monterey Jack cheese

How to Make Black Bean Turkey Enchiladas

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a frying pan, over medium/high heat, add 1 tablespoon of olive oil
  3. Add flour, ground coriander, chili powder, and ground cumin
  4. Stir in tomato sauce
  5. Add one cup of water
  6. Add ¾ tablespoon of salt
  7. Let this sauce simmer for roughly 12 minutes.
  8. In another large frying pan, add remaining 3 tablespoons of olive oil, over medium/high heat.
  9. In this large pan, add the onion and turkey.
  10. Cook and simmer for 10 minutes.
  11. Use a brush to spread oil on tortillas.
  12. Place tortillas in microwave for 30 seconds
  13. Add the corn to the browned ground turkey
  14. Add in the beans
  15. Add in the tomatoes
  16. Add salt and pepper to your liking.
  17. Put a layer, approximately half a cup, of sauce on the bottom of a baking pan.
  18. Add a spoonful of sauce, ½ cup of ground turkey, and one tablespoon of cheese.
  19. Roll up the tortilla around the filling
  20. Place in the baking dish
  21. Fill the rest of the tortillas
  22. Spread the remaining sauce and cheese over the tortillas in the baking dish.
  23. Bake for roughly 15 minutes.

  6. Do not rely on the back of the box for cook time. Most of the time Cavatappi will be cooked in 8-10 minutes, however you should begin taste testing the past after 4-5 minutes. Cook until pasta is at desired texture. Some people prefer pasta to be cooked “al dente,” where pasta is slightly chewy, but it will not have a hard center. However, other people prefer pasta to be more soft.
  7. Once pasta is at desired consistency, strain immediately.

Salmon, asparagus and orzo salad with lemon-dill vinaigrette is an easy to make, hearty and filling dish that highlights the best of fresh and healthy food. To learn how to make it, these are the requirements:

Ingredients:

When preparing a meal for six, you'll need:

  1.  Six cups of water
  2.  One and quarter pounds of fresh, omega-rich and skinless salmon fillet
  3.  One pound of trimmed and well cut spring asparagus
  4.  A cup of uncooked orzo/rice-shaped pasta
  5.  A quarter teaspoon of salt
  6.  A quarter teaspoon of freshly grounded black pepper
  7.  A quarter cup of red onion (thinly sliced)
  8.  Lemon-dill vinaigrette
  9.  Cooking spray

Directions:

Preheat the broiler.

Use a large enough saucepan to boil six cups of water. Once the water is boiled, add in asparagus and let them cook till crisp-tender or for about three minutes. Use a slotted spoon or a pair of tongs to remove them from the water and plunge them into ice cold water before draining and setting them aside.

Once again, bring the water (reserved water) to boil and add in orzo. Cook them in accordance to their package instructions. However, don't add fat or salt. While your orzo continues to cook, have the salmon fillet seasoned with ground pepper and salt. Then, place it on a boiler (foil lined boiler) and cooking spray coated pan. Broil till the fish starts to flake easily (when you test it using a fork), till it attains your desired doneness expectations or, for five minutes.

Making Lemon-Dill Vinaigrette:

To make this, you'll need:

  1.  Three tablespoons of fresh lemon juice
  2.  Two tablespoons of extra-virgin olive oil
  3.  One tablespoon of chopped fresh dill
  4.  A third cup of crumbled feta cheese
  5.  A quarter teaspoon of freshly ground pepper
  6.  A quarter teaspoon of salt

Once you have all the ingredients, use a whisk to combine them in a small bowl.

(If you choose to use bottled dressing instead, it's highly recommended that you add a little of dill as it helps in enhancing the salmon's flavor).

Serving:

When everything is ready, use two forks to break the salmon into mid-sized chunks and then, proceed to combine it with asparagus, orzo and lemon-dill vinaigrette. You should use a large enough bowl to combine them so that you have enough space to toss the pieces gently and have them coated with these three other ingredients.

You can then proceed to serve it as a snack, a side dish or even an entrée.

Easy Stuffed Pepper Casserole

Pepper

Ingredients:

The key ingredients for making one pot of stuffed pepper casserole include:

  1.  14.5 ounces of diced tomatoes - with juice
  2.  Eight ounces of tomato sauce
  3.  Three minced clove garlic
  4.  Two cups of diced bell peppers
  5.  Two cups of beef broth
  6.  A cupful of shredded cheddar cheese
  7.  One pound of extra lean ground beef (In case you don't have access to extra lean beef, use what's available but, remember to drain off some of its fat after it has browned)
  8.  One tablespoon of soy sauce
  9.  One teaspoon of Italian seasoning
  10.  Uncooked white rice (preferably basmati)
  11.  A tablespoon of olive oil (for option B)
  12.  Half a cup of diced yellow onions
  13.  Half a teaspoon of salt
  14.  A quarter teaspoon of pepper

Directions:

Option A:

Over medium high heat, brown your ground beef together with onions and garlic. You should let it cook for 5-7 minutes and, as it browns, start breaking it into smaller pieces.

Next, add pepper and salt into the pot and let them cook for an additional 5-7 minutes or till they start to soften. Next, reduce the heat to medium and then proceed to add diced tomatoes, beef broth, tomato sauce, Italian seasoning and soy sauce. Stir until evenly combined and then, bring to boil.

Once boiled, add in uncooked rice and wait it for boil. After it has boiled, reduce the heat to low, cover the pot and simmer till the rice becomes tender enough or simply, after 25 minutes.

When all is ready, remove from heat and serve.

Option B:

Preheat the oven to 350 degrees and line a rimmed baking sheet with a foil.

Cook ground beef over medium heat (while breaking up chunks) until browned or for about five minutes. Transfer it to a bowl and wipe the pan.

Add a tablespoon of olive oil into the pan, heat over medium heat and add onion and pepper. Let them cook for 15 minutes or till tender. Then, stir in browned beef, tomatoes, tomato sauce, clove garlic, beef broth, soy sauce and Italian seasoning. Increase heat to high and bring them to boil. Once boiled, lower heat to medium-low, let the mixture simmer for 10 minutes and add, rice.

Finally, pour your mixture into a 9 X 13 inch baking sheet and bake for 30 minutes or till bubbly.

Serving:

The best way of serving your casserole is while it's still hot or after it has cooled to room temperature. But, before presenting it to your family or guests, sprinkle shredded cheese on top. You may alternatively choose to sprinkle and then melt cheese in the oven before serving.
