Cupcakes

  • 1 box of chocolate cake mix
  • Orange juice (instead of water in cake mix)
  • 1 cup of chocolate chips
  • 1 teaspoon of all-purpose flour
  • 1 cup of diced candied orange peels

To make the cupcakes, mix the cake mix as instructed on the box substituting the orange juice for the water. Toss the chocolate chips with the flour and fold it in to the cake mixture along with the candied orange peels. Line a cupcake pan with cupcake liners and fill with mixture according to package instructions. Bake and let cool on a wire rack before frosting.

Frosting

  • 2 cups of powdered sugar
  • 1 stick (1/2 cup) of softened butter
  • 2 tablespoons of limoncello (or lemon juice for minors)
  • 2 tablespoons of orange juice
  • 1 zested orange
  • ¼ cup of finely diced candied orange peel for garnish

Combine all the ingredients except the candied orange peel and mix with a hand mixer beat until smooth. Spread on cooled cupcakes and add candied orange peel as a garnishment.

Chocolate Orange Cupcakes with White Chocolate and Orange Buttercream Frosting

Ingredients:

Cupcakes

  • ½ cup of flour
  • 5oz of caster sugar
  • 1 tsp of baking powder
  • 1 ½ oz of unsalted butter
  • 2 oz of melted dark chocolate
  • 1egg
  • 4 fl oz of milk
  • 1 orange, juiced
  • 3 tablespoons of granulated sugar

Preheat oven to 325 degrees F before mixing together flour, sugar, and baking powder. Once combined add the butter. Whisk melted chocolate, egg, and milk in separate bowl before adding to the dry mixture. Spoon into cupcake tins and bake for 15-20 minutes. When cupcakes are starting to cool, combine orange juice and granulated sugar in a bowl and carefully pour it over the warm cupcakes and set them aside letting them cool completely.

Frosting

  • 4 ½ oz of softened, unsalted butter
  • 9 oz of icing sugar
  • 2-3 tablespoons of milk
  • 1 ¾ oz of melted white chocolate
  • 1 zested orange
  • 3 ½ oz of orange chocolate

Beat the butter in a bowl until light and fluffy. Carefully add in the icing sugar and beat for five minutes. Beat in the milk, melted chocolate and orange zest then decorate your cupcakes.

  • 1 ½ cups of finely ground graham crackers
  • 1/3 cup of white sugar
  • 6 tablespoons of melted butter
  • ½ teaspoon of cinnamon (optional)

First mix the above ingredients and press them into an 8 or 9 inch pie pan. Bake it at 375 degrees F for 7 minutes and let it cool. If the recipe calls for an unbaked crust, then let it chill for about a hour.

Ingredients:

  • 24 whole Oreo cookies
  • ¼ cup of melted butter

In a medium-sized bowl or food processor, crush the Oreos until the texture is like coarse meal or crumbs then add the butter and blend until it is well combined. Press it into a pie pan and let it cool before using it.

The type of pie crust you use can depend on the flavor of cheesecake you desire. Do you want basic cheesecake, chocolate cheesecake, a fruity cheesecake, or a caramel cheesecake? There are a lot of options for cheesecake flavors, and a lot of recipes to make the perfect one.

Ingredients:

  • 2 pounds of cream cheese
  • 1 cup of sugar
  • 1 tablespoon of cornstarch, or 2 tablespoons of all-purpose flour (optional)
  • 1/8 teaspoon of salt
  • ½ cup of sour cream
  • 2 teaspoons of lemon juice (optional)
  • 1 teaspoon of vanilla extract
  • 3 large eggs
  • 1 large egg yolk

First, combine the cream cheese, sugar, cornstarch, and salt in a bowl. Mix on medium-low speed until the mixture is creamy and thick like frosting. Make sure no lumps of cream cheese remain.

Next, add the sour cream, lemon juice and vanilla mixing on medium-low speed until combined and creamy.

With the mixer still running, beat in the eggs and egg yolk one at a time making sure each egg is almost completely blended in for adding the next one.

Stir the mixture a few times before adding it to the crust of your desire.
