Cheesy Chive Pasta with Mushrooms

Have you found yourself falling into the same routine and making the same old pasta dishes. Maybe it is spagetti with meatballs or chicken parm., or simply pasta with sauce? Are you ready to make a pasta dish that is extra ordinary and that everyone will love? Make a cheesy pasta dish with extra ingredients and leave mouths wanting more! Follow this recipe to make a cheesy chive pasta with mushrooms:

Ingredients:

2 Tablespoons butter (margarine or any alternative works).

4 cups wild mushrooms (I recommend Oyster mushrooms).

2 tablespoons salt

1 box of pasta (your choice)

½ teaspoon ground black pepper

1 cup chopped chives

½ cup Romano cheese

1 teaspoon lemon zest

Directions:

  1. Spread butter on the bottom of a large skillet. Put over heat to melt butter and completely cover the bottom of the skillet.
  2. Add mushrooms to skillet and cook on medium heat for 5 to 7 minutes, depending on the texture you want your mushrooms.
  3. Set the skillet aside after cooking mushrooms.
  4. In a large saucepan, add water. Add salt to water and bring water to a boil.
  5. Add pasta
  6. Cook pasta at a boil for 8-10 minutes, depending on which texture you want your pasta to be. Make sure that you are adjusting your heat accordingly to avoid any water boiling over the top of the pan.
  7. Strain pasta, catching the left over water in a spare bowl.
  8. Add pasta to sauce pan (with mushrooms) with 1 cup of leftover water from boiled pasta
  9. Bring saucepan to a boil over medium heat.
  10. Stir pasta consistently to avoid any pasta over cooking on the bottom of the pan and making sure all pasta is getting coated with sauce.
  11. Bring to a simmer
  12. Add ground pepper, chives, and as much Romano cheese as you desire (or as much as you have!)
  13. Put on dishes.
  14. Before serving, add lemon zest equally among plates.
  15. Serve and enjoy.

This recipe will leave mouths watering and will freshen up your regular pasta routine. Try adding chicken the next time or different vegetables, like broccoli or asparagus in the future. I prefer green vegetables in this dish, however tomatoes and other vegetables are also good additions, depending on your own tastes and those you are cooking for. You can also experiment with different types of cheese. Mozzarella cheese would be a good substitute or even combine the Mozzarella cheese with the Romano for more intense flavors and textures. This dish only takes approximately 30 minutes to cook, making it a fast and easy meal to make for dinner on any occasion and any season. Try experimenting with different spices to change up this recipe, like by adding more pepper or garlic to enhance the chive flavors. Good luck and enjoy!
